We conduct an annual mescal agave roast in the spring, the sweet mescal has a rich molasses flavor, the inner heart has the texture of baked squash. I was eager to share my portion of roasted mescal with others in my travels and once left it in the heat of my car....it took on a transformation......I guess they call it fermentation! When you sneeze in front of a Hualapai, a tribal elder will tease you that it means your sweetheart is thinking of you. Working with plants my sneezing is frequent.......I'm always being asked, What's his name?!
