1Mirepoix: Saute high heat, onions and celery with carrots in sauce pan with olive oil and Ghee. Go to medium heat, add crused/chopped garlic.

3Sous Vide sliced tomatos 30 mins @ 140F. Crush and add to pan. Can also use canned cubed tomoatos, but Sous Vide add sweetness.

4Add grated fresh ginger. We grate using Kyocera CD-18 6-1/2-Inch Ceramic Grater (Amazon). The other "ginger" graters, rasp, cheese graters, and finer shark tooth smaller graters do not work as well.
