Our food vendor (Essence of Thyme and Cravings, Hyde Park, MA) would have to be willing to switch to compostable food service ware and we would need a system to store compost systems - we're located in the City of Boston and space is hard to come by.

We use the compartment trays for meals but still use the foam bowls for soup. Paper boats for some of the side dishes and the kids sometimes use them for salads if there isn't enough room on their tray. The trays were expensive and they are disappearing. More so at the high school than the elementary. The custodian does pull them from the trash when he sees them. I don't know where they are going but the stack get shorter by the week!

If we composte, I hear nightmares from others in the business that waste companies cannot keep up with the pickup demands, thus we have overflowing composte containers...would consider if made sense cost and operationally
