Take-Out: 10:30 a.m. - 1:30 p.m. - Mix coleslaw; put carriers into bags.  Get to-go boxes, and using order forms, fill to-go orders.  Place on shelves in alphabetical order for pick-up.  To-Go Plates: Serve gumbo into Styrofoam cups with lids.  Put rice, coleslaw, dessert and gumbo cump into covered plate.  Cover with aluminum foil.  Add bread and cutlery packet.  Close top and tape.
