Olive Oil2 Tbsp1) Preheat water bath to 140F. Heat olive oil over medium heat in a large saute pan. Add onion and red pepper and saute until soft and translucent. Remove from heat and cool.

Eggs, beaten22) In a large mixing bowl, mix together egg, cream, onion and peppers, soy sauce, bread crumbs and all the seasonings. Add in the meats and knead until thoroughly incorporated. Form into a loaf, transfer to a large ziplock freezer bag, and remove as much air as possible using the water displacement method. Sous vide for at least 2 hours and no more than 6 hours.

3) Place an oven rack on the top position and turn the broiler setting on high. Heat a cast iron skillet or oven safe skillet on medium-high heat. Remove the meat loaf from the ziplock and pat dry. Add it into the hot pan with the oil and brown both sides. Top with Chipotle Honey sauce, transfer to oven, and broil until the sauce has glazed. Remove, slice and serve
