Ice performs two critical functions: (1) chilling the drink to the desired temperature and (2) diluting the drink to the correct ratios of alcohol, sugar, and acid. When making a batched cocktail, you will not be shaking or stirring it; therefore, you need to perform chilling and dilution independent of the ice, the former via mechanical refrigeration, the latter by the addition of water.

Add the appropriate amount of water to dilute the ingredients above to the correct ratio, then chill the beverage without adding additional ice (e.g. do not put in a five gallon cooler full of ice).
