Butternut Squash LasagnaNotes: Use chicken thighs, not breasts for dinner recipe. Using 2 packs of thighs which are 6-8 thighs/pack worth of chicken, double the sauce. Half the recipe making with regular white rice, blitzing 1 head cauliflower for cauliflower rice- person can choose either 'rice' with this meal.

Edit: The starching and frying can be time intensive- if you don't care about the authentic 'crunch' sautee the thighs whole in a pan with a little oil until they have a crunchy brown exterior, then slice.
Notes: Share 1 big can of Tomato Basil for dinner. Bulk up tuna salad with onion, lettuce, relish, minced garlic. Add s/p and mayo. Husband takes chicken soup to work, I take small can of tomato soup for lunch tomorrow, make twice the tuna salad now. Toasting the bread does make a difference too IMO. Notes: Use whatever bell peppers are on sale that week and simple cooking onions. Use fresh or minced garlic, omit the fresh lime juice if you want (I have just a bottle in the fridge). Omit the tortillas if you're cutting carbs. We add shredded cheese and/or sour cream as well - family preference. We do buy the cilantro b/c it's cheap and makes a difference to us. (use half bunch cilantro here, half for the soup on saturday)

Roast one extra pepper for the lasagna for tomorrow night's recipe
Notes: I'm not paleo currently so I use shredded cheese (whatever was left after using the cheese for the fajitas). I also use dried basil, and only half a butternut squash will fill our whole casserole dish (other half used for pasta dish). Use fresh or minced garlic. Salad on the side.
Edit: Stretch this recipe by using a larger squash and more sauce. I typically use leftover Prego from a pasta dish, and cook it longer - more like 60-90 min, our pref.
Notes: Make another loaf of french bread if wanted. I grabbed this recipe bc I had some pine nuts left over from another recipe and didn't want them to go to waste- you can omit them or use another nut you have like walnuts. Meat eaters could easily add bacon to this recipe. I'll use dried sage instead of fresh. Notes: Might make another loaf of french bread here if I haven't already- we like french toast on the weekends.

We cherish this night of no cooking and relaxing together- it's our 'home date' night.

If your previous loaf has gone a little stale, slice up for homemade croutons- toss with oil s/p and garlic powder, 375 for 15 minutes. They taste crazy better than the store.
Notes: We dip bread into this as well.

I use fresh lime juice for this recipe - really makes a difference. Add a dollop of sour cream and lots of crushed chips for extra flavor.

Don't buy broth- buy boullion cubes. Microwave 1 cube in 1 cup of water for 1 minute- it'll become soft enough to mash with a spoon and stir up into a broth.
