Stijl:Quadra mash barley wine 11%Projected release:12-2-2025A powerhouse of a barley wine, brewed with four mashes (yes, quadruple mash, BAM!). Rye malt and Chevallier malt make up 65% of the grain bill, giving it a thick, almost jelly-like body and a marmalade-like aftertaste. Touches of chocolate rye, amber malt, and a hint of caramel malt add depth. English yeast, actually our IPA yeast, got fermented cold to introduce some interesting apricot esters. Hopped with Bramling Cross and Tango for red fruit and floral tea notes.

After extensive rum tasting, we found that Jamaican rum works best, with its fruity ester notes that complement the cassonade sugar and Belgian yeast. Rum, being distilled dark sugar, is perfectly complemented by the addition of some sugar at the end of the brew, giving it a rich, sweet depth. We chose a barley wine because the floral and fruity coffee flavors can get lost in the bold canvas of imperial stouts. By removing the roasted malts, the coffee shines much brighter. We added 200kg of toasted coconut to introduce oils that help carry the delicate aroma molecules from the coffee, while the slight coffee acidity pairs perfectly with the coconut. Fermented with English yeast, adding light esters that further enhance the coffee, making this beer a perfect match for craft coffee lovers.
