The two styles for a quote are not very easily discoverable. It doesn't appear to be possible to break out of a caption by hitting enter multiple times. Then I tried adding a second paragraph block to handle the line break in the quote, but that created new paragraphs. Upon further inspection of the available blocks, I located the quote block. Again, it wasn't quite correct but I did guess at the differing style and locate it. The pasting was strange as I tried to paste content I put into a second block into the first block, but I kept getting new blocks. I use keyboard shortcuts to do my editing.
