Avoid breading the chicken. Too much trouble for what it's worth.

Easiest PosoleStovetopEntreeMediumGreat
There are few recipes I'd label "easy" from Gwenyth's cookbook. This one relatively easy, but putting is as "medium" because of all of the steps involved (involving an appliance like a blender just ups the ante for me). Still - this is delicious and totally worth it.

Warm White Beans and Roasted Fennel

Made it the first time without spinach because I didn't have any and was still great!

Cajun Chicken GumboStovetopEntreeEasyGreat
I don't know why Blue Apron claims this is two servings. It's at least 4-6, and you can add a litlte extra meat to stretch. SO good.

Pan-Seared Salmon with Fennel and Heirloom Potato Salad
StovetopEntreeMediumGreat
Made this for Sunday lunch. I'd like to get the fennel sliced thinner and cook the potatoes slightly less, but otherwise great!

12
Chipotle Pork TacosEasyGreat
So good! The flavors are great with the pork. Next time, I'd marinade the pork for at least a couple of hours.

13
Shrimp, Leek & Spinach PastaEasyGreat
Didn't have leeks, so I just used an onion and caramelized it a bit (but not too much). Added some garlic, too. This was yum!

So good. Husband and son devoured it. I added some zucchini for some extra veggies.

15
Slow Cooker CarnitasEasyGreat
Delicious. Made this pork tacos with friends. I had about four pounds of pork butt to use - probably could've used a little less broth. It'd also be fun to add other cooking juices like salsa.

Kudos to mom for this recipe. Very tasty! I'd try it again with skin-on chicken breasts with rib meat.

Chicken and Potato ChowderEasyGood
Didn't have milk, so used heavy cream. Didn't have tarragon so used dried rosemary. Used red potatoes. Let individuals add cheese. Turned out great!

Skillet-Poached Huevos Rancheros
EasyGreat
GREAT! Make sure to pay attention to cooking times: about 3 minutes. I overcooked and the yolks were totally cooked. Didn't dig that.

24
Fennel-Crusted Pork LoinEasyGood
Great flavors. The first time I made it they only had pork chops at the store. Unfortunately, they got a little dry. I'd try this again with a loin for sure.

Slow Cooker Indian Chicken StewEasyGood
I used chicken breast pieces instead of thigh and it got really dry. I'd give it another go with the dark meat.

Butternut Squash, Caramelized Onion and Spinach Lasagna

Not worth it. I love all of these flavors, but together, they fall flat. And it's way too much worth to justify.

Black Bean Pasta with Kale and Cherry Tomatoes

Um, black bean pasta just sort of disintegrates. I guess I'd try this again with regular pasta, but not that special.

Wendy's Copycat ChiliInstant PotEntreeEasyGreat
So good. Only issue is it's a bit too much liquid. I think I'll drain the tomatoes next time and use half of the tomato sauce to see how that works. Easy enough to mix your own chili seasoning if you have the spices. I also skipped the green bell pepper the second time I made this and didn't miss it.

Works fine at 7 hours on low for my slow cooker. And, even though it switched to the "keep warm" setting an hour or two before we ate it, it was still tasty!
