PS2, Wii and 3DS can be a hit-or-miss, don't expect 100% of their libraries playable, but lots of titles works just fine.

Dreamcast can be ran at 960p, N64 can be ran up to 1440p sometimes, Saturn can be ran at 2x all without problems.

Playability WILL BE subjective from person to person.
Higher-end emulation tends to have a lot of random imperfections on even super powerful hardware so what is considered playable for some will be considered unplayable for others.
Playable specifically means that the average person can play through the entire game (or at least sections that have been tested) without any game-ruining problems that can greatly affect enjoyment.

For people who are testing with their own RP3+'s:

It is
STRONGLY encouraged to be as detailed as possible about your game's performance if you are testing a Gamecube, PS2, Wii, Switch, or 3DS game (give a general idea on game FPS/Speed, settings you used, emulator used, etc).

You do not need to give details for any system that isn't those five systems.

There's quite a few performance tests from Retroid themselves put on here.
While footage is definitely not faked by them, this is just a disclaimer that they may of picked certain game sections that ran better.
For people who get a RP3+ in the future, you are allowed to FULLY replace any Retroid Channel performance stuff
