Amaretto2 tsp272In a large bowl, use a whisk to mix ground almonds and icing sugar together throughly.

Almond extract3 drops3Make a well in the centre of the dry ingredients, pour in egg, Amaretto and almond extract, and beat lightly with fork in the well. Mix dry ingredients in.

Ground almonds175g10904Form mixture into a roll and split into two repeatedly until you have 32 equal sized pieces. Roll each into a ball between palms (should have little cracks in it which let air in and keep the amaretti light).

Icing sugar225g9055Arrange balls on silicone paper on baking tray and press down slightly.

Icing sugar for dusting10g406Cook for 15mins until lightly browned. Remove from oven, slide the silicone paper onto cooling racks and let cool for a few minutes before taking them off the silicone sheets.
