For the MuffinsFor the Muffins: Mix batter using the muffin mixing method. For the streusel, combine all ingredients in a bowl except for melted butter. Stir to make sure ingredients are evenly distributed. Pour in melted butter and stir with a fork until small clumps start to form. Line or spray a 12 cup muffin tin and evenly distribute batter between the 12 cups (cups should be about 2/3 full). top with streusel topping and gently press in to the batter. Bake at 375 for 18-20 minutes.
