I look at zombie selection and see what plant can counter and what plant can benefit from them, for example if I see torchlight I pick coldsnap or if I see a lot of armors I pick sun bean. I make sure I pick only 1 main attacker in 95% of situations with only a second attacker in emergencies, then I pick a support plant depending on the comp, the world, and zombie selection (snow pea, coldsnap, winter melon, sap, kernel, split pea, torch, etc) then I pick early game instants (potato mine, iceberg..) and late game instants (cherry, bombe, jala, etc).

some early levels where I had to beat buckethead spams with weak plants, I cant recall any particularly hard level as its been a while, tho I will say the overall difficulty compared to beta feels "uneven" for example a lot of the time I felt like I was playing beta part 2 when I'm playing alpha part 1

Choose a main sun producer(s) depending on how long the level looks, pick an offense that looks like it would do well against the zombie selection. I then bring a plant that would do good against the environment (gravebuster if a lot of graves, etc) then bring any instas or walls I feel like would do good. I then double check if each plant seems to be fit for the level.

the zombie selection and the levels design either spammy or light play a huge term so i would play it with anything in the first try to study and strategize the level before the actual successful attempt, that would be a different thing if you're not doing it pfless mowerless and just playing it with a whatever strategy which are like using a heavy plant in a long level or using walls when there isn't a zombie that symbolizes a threat to them such as explorer, excavator or using the plants that are given to you before the level if you saw any good use in using it.

Block using Defensive plants or High HP plants. Use pumpkin for attacking plants If not want use wall plants. If the plants died by Bug tiles, use Intensive Carrot to revive them.

Basically I always use starfruit T2 + Peanut T2. Sometime I use snow pea + melon-pult (both T1) If there is heavy level. For sun production, I always use double sun like sunflower T3 /sun shroom T1 (If night) + Primal sunflower T1. For Instant, I usually use Grapeshot T3. And lastly for Staller, I use lots of staller, like Stalia, Stunion, Spring Bean, and Iceberg Lettuce.

At least 2 sun producers (or 3-4 if the level's long enough to go heavy), 90% of the times no more than 2 attackers. Lastly I use the last 3 slots for instants. most of the times one is damage dealer and one is a staller.

Usually I would use two sun producers (Reg and Primal Sun), choose something for early game (either Pot Mine + Squash or Tier 2 Puff) , attackers that I think would help me complete the level (usual set-up is Snow Pea and Star/Roto if the level is "easy") then filling the last slots with a plant for stalling and/or an instant.

Alpha I'm at 13-1 as of writing this, and Beta I finished entirely.No, but I do play S levels! A lot of them are really bad.
2-10 was a huge difficulty spike for World 2, 7-10 was horrible, 9-10's sun objective was pretentious, 11-6 spams torchlight when you haven't unlocked Cold Snapdragon yet, and 12-4 was one of the worst Lost City levels I've ever had the pleasure of playing.

Tall-nuts. The game presents it as carrot being the best way to counter them but I'm pretty sure a slow recharging plant isn't very useful when dealing with a barrage of tiny projectiles that will kill the revived plant in a few seconds anyway. Yes, T3 Carrot exists, but unlike what goodpea2 and DT believe, it turns out that T3 Carrot sucks against Bug Tiles! Who would've guessed?!
