Chicken in Vinegar Sauce4 Plum tomatoesButterI have found that 2 tomatoes here isn't quite enough, which is why I use 4 instead. I also like to brown the chicken in olive oil instead of butter since it has a higher smoking point, so I usually hold back on the butter just a tad. This is excellent served with haricot vert (green beans) and rice.

Arugula would also work well. I like to cook the pancetta in the air fryer to keep it light and crispy. Serve with a side of crusty baguette to make this more substantial.
