Aperture (Av) priority if you want a lot of depth of field
Shutter(Tv) priority if you want to control the motion blur

What ISO generally won't show noticable noise/grain?

Depends on the camera, but try 400 or 800, test your camera by putting it on a tripod and taking the same picture with all ISOs and looking at them and printing them

What shutter speed won't show motion blur?

For non-moving subjects: you want at least 1/lens focal distance, meaning if you have a 50mm lense you want at least 1/50th of a second, or for a 400mm lens you want 1/400th of a second

For moving subjects: a kid playing, 1/250th, a water droplet, 1/400th, a pro athelete or racecar without panning: 1/1000th, a racecar with panning (blurred track, focused car): 1/250th
