W790 boards require registered ECC DDR5 memory (RDIMMs), not your standard unregistered (UDIMM) consumer DDR5 kits.
They are physically incompatible with UDIMMs due to different keying compared to RDIMMs. Keep this in mind when selecting memory.

Running 1DPC configurations of DDR5 on the quad-channel boards (e.g. 128 GB with 4x32GB) seems to hold well up to 6400-6800 MT/s or so, going by motherboard QVL lists.
On the other hand, 2DPC configurations appear to be less potent, topping out at 5600-6000 MT/s.

Although the chipset nominally allows for both CPU and RAM overclocking, unlike mainstream boards, a locked Xeon-W chip also locks down memory overclocking in addition to CPU overclocking.

W-3400 series CPUs have 112 PCIe 5.0 lanes, whereas W-2400 series CPUs have 64 PCIe 5.0 lanes. This creates a lane allocation mess on several boards.

In order for W-3400 CPUs to run octa-channel RAM, the motherboard used also needs to support octa-channel memory configurations.
