Processing requires the Java JDK. Apple OS X and Linux systems already have the Java JDK installed. If your computer runs Windows, the "Standard" Processing installer includes the required Java JDK. ONLY download and install the Standard one if you DO NOT already have the JDK installed. If you do, download the alternative, "Without Java," installer.
