Had some stomach bloating/discomfort Some possible sources of the discomfort: some coconut milks from a can contain guar gum; those from cartons, carageenan. Both are gut irritants. For those with generally irritable bowels, garlic and onion are some of the biggest gas-triggers. Also for those with any major gut issues, leafy greens should be well-cooked. Not sure what your situation is though.

Not sure what was in the gumbo. Did you have any bloating from the marinara or tomato? Depending on how quick your GI clearance is, that bloating/discomfort could be from earlier in the day or this dinner.
