Open the Protected Ranges sidebar, use the checkbox in B3 to select one of the methods to use, and then test using the checkboxes in columns E and G, watching the sidebar. The background color is handled by conditional format rules instead of within the script to make things appear instant, while allowing the script to run in the background.

ProtectOrUnprotectOneProcesses only row with the checkbox that was edited. Can't process multiple rows. Probably faster if you have many checkboxes.

ProtectOrUnprotectAllProcesses all the rows with checkboxes. Allows for you to toggle multiple rows at one time by selecting multiple checkboxes while holding Ctrl and then using the space bar. Since all rows get processed each time, a missed checkbox will be corrected the next run.
