Organic Rainforest Farms Kona:For Kona RainForest Farms (KRF), it’s a story that’s part good luck, part hard work and part passion. Thanks to the perfect combination of volcanic soil, sunshine, rainfall and temperature (around 80⁰ in the daytime and 60⁰ at night), and location at the 2000-foot elevation on the flanks of Mauna Loa the coffee coming out of Kona is some of the best in the world.
One of the first decisions the Barnes made to ensure quality and great taste was to grow KRF coffee organically. Growing organic coffee – and less than 2% of all Kona coffee is grown this way – takes more work because you can’t use conventional growing techniques that typically rely on agrochemical pesticides and manufactured fertilizers. KRF, instead, makes its own mulch from leftover coffee pulp and uses a variety of natural methods for pest and weed control and fertilizer. Application and use takes more time and effort, but it means a completely natural product. KRF coffee is certified organic by the United States Department of Agriculture through the International Certification Services. Along with growing coffee organically, the farm also operates sustainably – with electric power from the sun, a backup generator and water from rainwater caught in catchment tanks.

BRAZIL ORGANIC CHAPADA DIAMANTINA PULPED NATURAL This coffee is sourced from Fazenda Floresta. A family owned farm operating in the state of Bahia, Brazil near the Chapada Diamantina National Park, known for its mountainous cliff formations (chapada) and 19th century diamond mining (diamantina). Coffee is biodynamically cultivated, which is a holistic approach to agriculture where the farm is managed as an interconnected organism that generates its own fertility through diverse cover-cropping and the integration of manure from livestock raised on the farm. Biodynamic goes beyond organic practices including applications of homeopathically treated compost based on the rhythms of nature.

Organic, Fair Trade Ethiopia Yirgacheffe Natural ETHIOPIA YIRGACHEFFE 3 FTO NATURAL coffee is sourced from family owned farms organized around the Worka Cooperative located in the southern district of Gedeb, Ethiopia. The Worka Cooperative was established in 2005 and currently has approximately 300 members. In 2005, the cooperative joined the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU), an umbrella organization established 2002 to support a sustainable coffee supply from cooperatives in the Gedeo ethnic region of Ethiopia. There are twenty-six other cooperatives affiliated with the YCFCU totaling more than 35,000 members. Cupping notes: Toffee, cocoa, strawberry fruit leather

PAPUA NEW GUINEA ORGANIC TIMUZA A/XThe Timuza Coffee Cooperative represents over 200 small-holder farmers of the Kamano tribal group, located southwest of Kainantu in the hamlets surrounding Namura town. The soils are are a mix of black & brownish red loam, with predominately traditional typica grown under casuarina and albizia shade trees. Average farm size is 1.4 hectares per family, with adjacent gardens for cultivation of food crops such as sweet potato, taro, and cassava. Farmers have received training and assistance in financial management, gender equality, coffee husbandry and standards for processing through local partners. The harvest takes place from April through September, with selective harvest of ripe cherry, manually pulping, fermentation in traditional bilum bags, washing, and full sun-drying. In 2016, Timuza placed 1st in the National Cupping Competition.

UGANDA SIPI FALLS FULLY WASHEDSipi Falls is a beautiful landmark in Uganda, originating from Mount Elgon. According to many, Elgon was once the tallest mountain in Africa. The Sipi Falls Coffee Project was initiated by Kawacom in 1999. It now incorporates over 5,000 small-holder farmers who cover an area of over 2,000 hectares. With training, young trees, and extension services provided by Kawacom, farmers are improving agronomic practices for both higher quantity and higher quality yield, which generates more income. Extensive use of intercropping provides both shade and compost for the coffee trees as well as food for the farmers and their families.

Organic, UGANDA KAPRORON SIPI FALLS HONEY PROCESSED This unique and delicious coffee comes to us by way of smallholder producers growing coffee on the northern slopes of Mount Elgon, a massive peak split nearly in two by the border of Uganda and Kenya. The microregion is rife with coffee and is well-served by the Sipi Falls mill, a centralized washing station with the capacity for processing cherry and drying coffee to improve the value to local farmers.
Coffee producers in the region had been home processing their coffee (and still do), thinking it was a way to add value to their crops. Kawacom, the export industry that owns the Sipi Falls washing station, has gone to great lengths to sit down with producers and show them the time savings and added value (and quality) by contributing their unprocessed cherry to a central mill where washing, fermenting, and drying can be performed consistently with professional oversight. They have also started an example nursery with high quality varieties and provide agronomic support to the local smallholders, many of whom are families led by women.
In this special microlot (among the first Sipi Falls has ventured to produce) the coffee has undergone “Honey” processing, a hybrid processing method that strips the skin and fruit away but leaves the sticky mucilage surrounding the coffee in tact. Before this, however, the coffee cherries must be floated to sort for density and damaged seeds. After pulping, unlike with washed coffees, the mucilage-covered parchment is sent straight to the drying tables, skipping the fermentation tank and channel grading steps. After a full three weeks drying under retractable canopies and undergoing frequent turning to promote even, slow drying and hand-picking to remove visible defects, the coffee is ready to export.
This honey processing is the rose, any other name by which would smell as sweet… frequently referred to elsewhere in the world as semi-washed or pulped natural. So far as I can determine, it is Brazilian processing equipment manufacturer Pinhalense who stake the claim to creating the world’s first cereja descascado (literally “deskinned cherry”) in 1991 as a value-add alternative to the country’s traditionally dry-processed coffee. The pulped natural was a handy way to sell the local market a bunch of new equipment while offering an environmentally friendly answer to demands for washed coffees in dry regions.

Fair Trade, Organic, Mexico ChiapasThis coffee is sourced from family owned farms organized around the Grupo de Asesores de Producción Orgánica y Sustentables (GRAPOS), a farmers group operating in the municipalities of Unión Juárez, Cacahoatan, and Tapachula located within the state of Chiapas, Mexico. GRAPOS has invested in nurseries to support farm renovation, and diversification initiatives including a women’s knitting program and mushroom cultivation project aimed at creating other sources of income.

Colombia Fair Trade, Organic Tolima del RioThis coffee is sourced from family-owned farms organized around ASOTBILBAO, a producer association with 50 members who live in Bilbao within the municipality of Planadas in the department of Tolima, Colombia. Members of ASOTBILBAO are graduates of Servicio Nacional de Aprendizaje SENA. SENA is a non-governmental educational institution that provides social and technical education to its participants. The average age of members of ASOTBILBAO is 35 years old and in collaboration with an exporting company called Inconexus, coordinate efforts to improve the quality of coffee including technical support to guide coffee farmers on the best agricultural practices for quality coffee production and with investments in projects focused on the improvement of coffee farm infrastructure. cupping notes: Chocolate, peach, orange juice

Peru Fair Trade, Bird Friendly La FloridaPeru FTO SMBC La Florida coffee is sourced from family-owned farms organized around Cooperativa Agraria Cafetalera La Florida, a cooperative established in 1966 in the province of Chanchamayo, Peru. La Florida has more than a thousand members who work together through the Occupational Learning Center for Sustainable Agriculture where farmers learn environmentally friendly farming and crop diversification techniques aimed at creating additional sources of income. La Florida also funds micro-financing for women who run household businesses, rural healthcare clinics, and infrastructure projects to maintain five roads, three potable water systems, and three schools..Cupping notes: Nice body, caramel, cocoa

Flores, BajawaFlores Organic, Rainforest Alliance Certified, Bajawa Ngura is sourced from family owned farms located on the slopes of the Inerie volcano in the Ngada regency of Flores, one of the big islands in the Lesser Sunda archipelago of Indonesia. Over the last decade, a growing number of farmer groups have pooled resources to improve processing techniques, similar to those found in Sumatra. Processing is done very well, reflected in the ripe cherry selection, raised bed drying, and hand sorting done three times before export.
