In February I will be teaching a six week gluten free cooking class through Willamalane in Springfield, OR. In addition to teaching a few recipes like pie crusts I would like to go over how to make your own basic flour mix and what to do once you have it, give a cost/taste comparison on different boxed mixes, and cover gluten free meals on a budget.
Are you gluten free or want to cook for your gluten free family and friends? What would you want to see and do in a gluten free cooking class? Specific recipes? Favorite childhood meal? Tricks with baking that you haven't figured out how to master in the gluten free world?
