INTRODUCTION

Cookies are baked treats. A cookie is a small sweet, crispy or cake-like pastry most often made with flour, sugar, honey, and Butter.

They are characterized by:

  • Sugar content
  • Fat content
  • Low moisture
  • Cookies may be defined as small cakes made from dough that is sufficiently Viscous to permit the dough pieces to be baked on flat surface
  • Cookies are often referred to as small cakes
  • In our Country these are commonly known as biscuits

Ingredients

1. Refined Wheat flour (Maida)

2. Butter

3. Soy milk Powder

4. Honey

METHOD OF PREPARATION

  • Shape them according to your choice.

  • Grease the microwave tray and place the cookies. Bake them at 180 °C for 15-30 minutes.

  • In this work, we have make at least four blends referred as C, C1, C2, C3, for the judgement of acceptability or unacceptability of the cookies incorporated with soy milk powder and honey .

  • We also prepare cookies by a standard recipe referred as C for the comparative study with C1, C2, and C3.

FLOW DIAGRAM

Preparation of raw ingredients

Mix flour and sieved together

Mix butter and sugar

Dry ingredients added into the milk

Kneaded to make dough

Kept it in Refrigerator

Rolled the dough and cookies were cut

Preheat oven at 150◦c for 15-20 min

Bake for 15 – 30 min at 180 ◦c

Cookies cooled for 5-10 min and packed

Discussion

The experimental final of utilizing food industry by – products as soy milk Powder and honey for developing high protein and dietary fiber biscuits are presented and discussed in this.
