Sesame Honey Energy Balls

Makes 60 for a lively gathering of thoughtful people

Ingredients

3 ½ cups white sesame seeds (dry-toasted in skillet or wok)

3 ½ cups almond meal

4 t ground cardamom

2 ½ t vanilla extract

1 cup raw honey

Method

  1. Finely grind all ingredients (except honey and ½ cup of sesame seeds) in a food processor.
  2. Transfer to a bowl, and mix in the honey until even.
  3. Roll into 1” balls.
  4. Roll in reserved sesame seeds.
