It's your second day as the quality assurance tech at the end of the cannery line. Yesterday was like working with training wheels, as your lead stayed with you for your entire shift. Today, the training wheels come off and you'll be working by yourself without supervision. It's time to prove yourself.

Let's hope for a stress-free day...

QA Lead: We have a huge problem. A USDA auditor has just arrived for a surprise inspection. This is the biggest, most important audit of the year and she came two weeks earlier than expected. If we fail this audit, we'll receive a massive fine. All QA techs and processors must follow protocol to a T.

The QA manager and I are going to be busy maintaining shop, so we won't have time to supervise or help you. But we have faith that you'll do an awesome job. If you have any questions, just ask the other quality assurance tech, Tom, who will be working on the other line. Also, you can recheck your SOP (Standard Operating Procedure) notes right now, but work starts soon so be quick.

All QAs should wear all proper PPE (hairnet, nitrile gloves, ear protection) and check to make sure all processors are as well.

They shall visually and physically inspect 20 random cans at start-up and every 15 minutes after.

They shall check the seams to make sure they are properly sealed and there are no physical defections. They should run their finger under the seam of the can while spinning the can 360 degrees to feel for any protrusions or droops.

They shall check for any abnormalities in the can body including but not limited to dents and scratches.

They shall weigh all 20 cans and record their weight.

They shall check all 20 cans with a vacuum gauge to check for sufficient vacuum.

They shall do all the above to any cans spit out by the Can Inspector™.

The End of Line QA should inform the QA manager immediately if:

  • There are any unusual markings on the inside of the seam wall, especially any straight lines that run from the rim to the base. This could be an indication of a broken chuck on the seamer head (also inform the head seamer mechanic).
  • Three or more seams have droops within a 15-minute timeframe.
  • Five or more cans weigh under 213 grams within one 20 can sample.

They should ensure the proper codes are being printed on the cans. Can codes are generated as follows:

  • Location # = Nowhere, Alaska is location #4
  • Type of Fish = PNK (Pink Salmon), SOK (Sockeye Salmon)
  • Date of Production = YYMMDD
  • A B C D depending on which quarter of the day (A= 12am-6am, B= 6am-12pm, C= 12pm-6pm, D= 6pm-12am)

So, a code would look like ''4SOK220228C'' for sockeye salmon canned in Nowhere, Alaska on February 28th, 2022 at 3:30pm.

Clipboard YES: Tom: Good, you have your clipboard with all the appropriate forms.

Clipboard NO: Tom: You forgot your clipboard and forms… How are you going to document your work?

Pen YES: Remember, we don't use capped pens in the cannery. The caps can fall off and get lost in the product.

Pen NO: Good, you didn’t grab a capped pen. The caps can fall off and get lost in the product.

Hairnet YES: Good, you have your hairnet on so your hair doesn't fall in the product.

Hairnet NO: Where is your hairnet? Do you want hair to fall in people’s food?

Gloves BOTH: Your nitrile gloves will keep the product clean and stop the spread of germs.

AirPods YES: You shouldn't wear your AirPods. You need to be able to communicate with other members of the team.

AirPods NO: I’m glad you left your AirPods here. You can’t communicate with other members of the team with those in.

Ear Protection BOTH: But you do need your ear protection since the cannery is very loud.

Vacuum Gauge BOTH: Likewise, you'll need your vacuum gauge to measure vacuum in the cans.

Gum YES: You should never bring food in the cannery. Spit out the chewing gum.

Gum NO: Good to see you’re not bringing any food or gum.

I won't be able to babysit you once we get in the cannery. Please adhere to protocol so we don't receive any infractions from the auditor.

Remember that you set an example for the processors. If they see you don't have the proper PPE, they will think they can get away without using it too.

You notice it has been 15 minutes since start-up. The cans have had the wrong codes the whole time. That should be at least 2500 cans, which is too many cans to re-can. You’ve lost the company a significant amount of money. You put a yellow tag on the current retort basket and make a note on the appropriate paperwork that all the baskets so far have cans with the wrong code. Head Seamer Mechanic: It seems we have a broken chuck on the seamer machine. Come here, I want to show you something. See this little line here on the seam wall? That's evidence of a broken chuck. This marking may mean that the integrity of the can has been compromised. We have to catch these quick or else every can that comes through that seamer head is going to be compromised.

The USDA auditor overhears this...

USDA Auditor: You mean you have a QA tech working on the line who doesn't know what a broken chuck mark looks like? I'll have right you up for an infraction.

Let's review everything:

To be ready for work, you need your clipboard with the appropriate forms, a hairnet, nitrile gloves, ear protection, and a vacuum gauge. You should never bring food or small objects like pen caps that can fall into the product. Never wear earbuds as you need to communicate with your team.

The first thing you should always do is visually inspect the cans on the conveyor belt to make sure the can code has the proper date. You should do this before pulling cans and taking them to the side table for inspection in order to minimize losses.

This is a droop (picture), which needs to be pulled from the line and re-canned. If you find three or more in 15 minutes, inform the QA manager.

This is a mark from a broken chuck (picture). If you see one of these, inform the QA manager and head seamer mechanic immediately.

Any can that weighs under 213 grams is underweight and needs to be pulled and re-canned. If you find more than five in one 20 can sample, inform the QA manager immediately.

All processors need to wear hairnets and nitrile gloves at all times. If you see someone who isn't, please ask them politely to put them on. Never be rude. You can simply motion your hands and point to your hair, and they will understand.

Tag any retort basket with a yellow ribbon if it contains cans with wrong codes or cans with foreign objects. Then write the information down on the appropriate paperwork. This will let the warehouse know that those cans should be dealt with accordingly.
