Macaroni And Cheese

Ingredients: 2 litres water, 2 teaspoons salt, 1½ cups macaroni pasta, 3 tablespoons butter (50g), 3 tablespoons flour, 2 cups milk, 1 cup Wattie’s frozen whole kernel corn, 1 cup grated tasty cheese, salt and pepper to season, 2 fresh tomatoes (sliced), 3-4 tablespoons grated tasty cheese (extra).

Method

  1. Bring the water to the boil in a large saucepan. Add the salt and macaroni pasta stir well. Boil for 12-15 minutes or until the pasta is al dente (firm to the bite). Drain well.
  2. Turn the oven on to 1800C to preheat.
  3. Melt butter in a saucepan. Stir in the flour and cook, stirring, until bubbles appear on the surface
  4. Remove the pan from the heat. Gradually add the milk, stirring, until the sauce comes to the boil and thickens. Stir in the frozen corn. Lower the heat and continue cooking and stirring for another 2 minutes.
  5. Remove from heat. Stir in grated cheese and season with salt and pepper.
  6. Stir the cooked macaroni into cheese sauce. Pour into a greased, medium sized ovenproof dish.
  7. Put the tomato slices on top of the macaroni mixture and sprinkle over the extra grated cheese, optional: add bread crumbs.
  8. Bake in the preheated oven for 15-20 minutes until the macaroni cheese is heated through and the top is golden.

Chilli Con Carne

Ingredients: 300g lean beef mince, 1 onion peeled and sliced, 1 Tbsp crushed garlic, 420g can watties chilli beans (hot), ¼ cup watties tomato sauce or paste, 1 cup beef stock or water.

Method:

  1. Heat oil in a lidded frying pan and brown the minced beef, breaking it up with a fork as you go. This may be best done in two batches. Set aside.
  2. Add onion and garlic to the pan and cook for 2-3 minutes until just beginning to soften.
  3. Return the meat to the pan with watties chilli beans, watties tomato sauce or paste and beef stock or water
  4. Cover and simmer 15 minutes until the beef is tender.

Serve with rice and fresh salad.

Mie Goreng

Ingredients: 3 tbsp oyster sauce, 320ml, 3 tbsp tomato sauce, 2 tbsp sweet chilli sauce, 2 cloves garlic, crushed, ¼ tsp salt, 200g beef or pork schnitzel, sliced, 2 tsp oil, fresh or dried noodles for 4 people, 2 eggs, lightly beaten, 2 spring onions finely chopped, 1 cup mung bean sprouts, ¼ green cabbage finely sliced (about 2-3 cups)

Serves 4

Method:

  1. In a bowl combine the oyster sauce, tomato sauce, sweet chilli sauce, garlic and salt. Add schnitzel and stir to coat the meat evenly. Set aside for 5 minutes to marinate while you prepare the vegetables and noodles
  2. Heat 1 tsp oil in a wok or heavy based frying pan. Add a quarter of the marinated schnitzel, tossing quickly until the meat is sealed. Remove from pan and set aside. Continue cooking in small batches adding a little more oil if required. If you add all the meat at once, the pans temperature will drop significantly and the meat will stew rather than seal.
  3. Cook the noodles according to the packet instructions while the meat is cooking.
  4. When all the meat is sealed, return it to the pan. Scrape any remaining marinade into pan, add eggs and toss to combine well.add spring onion and cabbage and stir fry so that the cabbage becomes coated in the marinade and begins to soften.
  5. Drain the noodles thoroughly and add them to the pan , folding them through the other ingredients. Continue cooking until the mixture begins to look almost dry, then add the bean sprouts.

Serve in bowls.

Chocolate Chip Cookies

Ingredients: 200g butter, 1 cup Chelsea White Sugar, 1 cup Chelsea Soft Brown Sugar, 2 eggs, 2 tsp vanilla essence, 3 cups flour, pinch of salt, 1 tsp baking powder, 2 cups chocolate chips

Method: Melt butter, and add both sugars and cream these together. Beat in the eggs and vanilla then mix in the dry ingredients. Roll into medium sized balls, making sure the mixture is not too wet! Put on a well greased baking tray. They shouldn't spread too much so flatten slightly. Bake at 180° for 8-10 minutes.

Tip: you can easily half this recipe. Or roll half into a log, wrap in cling film and freeze. Cut into 15 pieces while still frozen and bake.

Chicken Rice Patties

Ingredients:

  • 2 cups cooked jasmin rice
  • 1 Chicken Breast
  • ½ tablespoon olive oil
  • ½ large carrot
  • 3 spring onion stalks
  • 1⅓ cups grated mozzarella cheese
  • 3 eggs

Method:

  1. Preheat oven to 200o celsius
  2. Slice chicken breast in half width way, so it will cook through quicker
  3. Heat oil in medium frying pan and cook chicken breast until it begins to brown
  4. Remove from pan and shred chicken using a fork and set aside
  5. Grate carrot so you have at least 1 cup
  6. Finely slice spring onions
  7. Lightly beat the eggs
  8. In a large bowl add cooked rice, chicken, carrot, spring onions, eggs and about ¾s of the cheese and mix well
  9. Spray muffin tray with cooking spray and then spoon mixture into the tray. Top with remaining cheese
  10. Place in oven for 15 minutes until the tops turn golden brown
  11. Let them sit in the tray for a few minutes before removing to rack to cool. Use a knife to work around the edges of the rice patties to make removing them easier

Fried Rice

Ingredients

  • 1 cup long grain white rice
  • 2 eggs
  • 2 teaspoons vegetable oil
  • 2 bacon rashers, chopped
  • 1 carrot, peeled and grated
  • 2 shallots, trimmed, finely sliced
  • 1/2 cup frozen peas, thawed
  • 1 tablespoon soy sauce, plus extra to serve

Method

  1. Cook the rice in a large saucepan of boiling water for 12 minutes or until tender. Drain and leave to cool ( http://www.thekitchn.com/how-to-cook-rice-on-the-stove-44333).
  2. Prepare vegetables and bacon: Chop bacon. Peel and grate carrot. Finely slice shallots.
  3. Using a whisk, lightly beat eggs in a small bowl. Heat oil in non-stick wok or large frying pan over medium heat. Add eggs. Swirl over base to form an omelette. Cook 2 minutes. Turnover. Cook 2 minutes until set. Transfer to a chopping board. Set aside to cool slightly. Cut into short strips.
  4. Add bacon to wok. Cook 4 minutes until light golden. Add carrot. Stir fry 1 minute. Add shallots, peas and rice. Cook, stirring, 3-4 minutes. Add egg and soy sauce. Stir until heated through. Serve immediately, with extra soy.

Burgers

Ingredients - Serves 4

• 250g lean beef or lamb mince

• 1 small onion, finely chopped

• 1 egg

• 1 cup soft white breadcrumbs

• Salt and pepper to taste

• 2 tsp oil

Method

1. Mix the mince, onion, egg, breadcrumbs and seasonings

together.

2. Using wet hands shape into 4 flat patties of equal size.

3. Heat oil in a frying pan, add patties and cook for about 5

minutes each side or until cooked through.

4. Serve between buns or bread with desired fillings.

Banana & Chocolate Chip Muffins

Ingredients: 2 c Self Raising Flour, ½ t Salt, ½ c Caster Sugar, ½ c Chocolate Bits, 100g Melted Butter, 1 c Milk, 1 Egg, 1 c Mashed Banana.

Method:

  1. Mix flour, salt, caster sugar & chocolate bits in a bowl
  2. In seperate bowl melt butter then add milk & the egg and beat to combine
  3. Mash & measure the bananas and add to liquid ingredients
  4. Tip liquid mixture into dry ingredients, fold carefully (don’t overmix)
  5. Carefully spoon muffin batter into prepared muffin tins (line with muffin cases)
  6. Optional topping: mix 1 T sugar & ½ t cinnamon and sprinkle over top of muffins, drop some chocolate bits on each
  7. Bake at 220oC for 12-15 mins, testing to check if muffin is cooked, cool for 2-3 mins before removing from pans

Vegetarian Mince

INGREDIENTS: 400g tin black beans, drained (240g, or ~ 1 ¼ cups, when drained), 50 g (~ ½ cup) walnut halves, 5 medium mushrooms, roughly chopped, 1 tbsp oil, 1 onion, finely diced, 2 cloves garlic, minced, 1 medium carrot, finely diced, 250 ml (~ 1 cup) hot vegetable stock, 1 tbsp tomato puree / paste, 2 tbsp gravy granules, ½ tsp dried thyme, Black pepper, 100 g (~ ½ cup) sweetcorn, 100 g (~ ½ cup) frozen peas, Mashed potato, to serve (optional)

INSTRUCTIONS

  1. Add the black beans, walnuts and mushrooms to a food processor, and blitz briefly to give a coarse mince-like texture. Don't allow the mixture to become completely smooth - you may need to scrape down the sides a couple of times to help it blitz evenly.
  2. Heat the oil in a large, deep frying pan, and add the onion, garlic and carrot. Cook over a medium heat for 5 minutes, until the onion is soft and translucent. Add the bean mince, and cook for a few more minutes, stirring regularly, until the mixture is soft and dark in colour.
  3. Add the hot vegetable stock, tomato puree, gravy granules, dried thyme, and plenty of black pepper. Mix thoroughly to combine, until the gravy granules have completely dissolved - they will thicken up the liquid. Bring to a gentle simmer, and allow to cook for a further 10 minutes or so, until the carrot is soft.
  4. Add the sweetcorn and frozen peas, and mix to combine. Cook for a few more minutes until the peas are hot. If the mixture is too thick for your liking, add a dash more water - if too thin, add a few more gravy granules.
  5. Serve hot with mashed potato, if desired.
