Maple Trees &
Sugaring
Math
How much Sugar
is in the Sap?
Depends on the type of Maple
tree, and the overall health
of the tree.
We tap 4 main types of Maple trees:
Sugar, Red, Silver, & Black
Sugar (Hard) Maple
The King of Maples!!
Generally about 3% sugar content in the sap, but can be much higher, sometimes as high as 4-5%!
Black (Hard) Maple
Not very common in Vermont. Hard to tell apart from sugar.
Generally about 3% sugar content in the sap, sometimes higher.
Red (Soft) Maple
Often called “Poor Man’s Maple” due to lower sugar content, but very common.
Generally about 2% sugar content in the sap.
Silver (Soft) Maple
Similar to the Red Maple, lower sugar content, tapped when Sugar maples are not abundant.
Generally about 2% sugar content in the sap.
Calculating Syrup Yield
Remember the Rule of 86!
86
% Sugar of Sap = Gallons of Sap to
make 1 Gallon Syrup
Percent Yield (Error)
Calculation of Efficiency of Boiling
Actual Yield x 100 = Percent
