Biological value proteins:

HBV (High biological Value)

  • Contain all essential amino acids
  • Usually animal sources and soya beans.
  • Essential amino acids cannot be manufactured by the body . They must be obtained from food.

LBV (Low biological Value)

  • Contains some essential amino acids.
  • From plant sources and gelatine.

How do vegetarians/vegans get all essential amino acids needed??

11 of 14

Supplementary/complementary value of protein

  • Eating 2 low biological value protein foods e.g. Bread, beans

Can ensure all essential amino acids are obtained.

This is very important in a vegan diet as there are no HBV animal sources of protein present.

  • Beans are high in lysine but low in

Methionine.

  • Bread (wheat) low in lysine and

high in methionine.

Denaturation- a property of protein.

  • Unfolding of the protein chain, causes protein to change shape.
  • Irreversible e.g. coagulation –scrambled eggs
  • Coagulation of protein (setting) is an example of an effect of denaturation.
  • Causes of denaturation:
  • Dry/moist heat e.g. Frying an egg
  • Acids e.g. Lactic acid bacteria in milk
  • Enzymes e g. rennin in cheese
  • Mechanical action e g. whisking
