Over the past 2 decades in particular, Americans have become more and more overweight. In a recent report from the Centers for Disease Control and Prevention (CDC), it was found that more than 50 percent of adults are overweight and about 20 percent are obese. Imagine 20 years in the future. Do you think this trend will get worse or will it reverse in 20 years? Will there be more or fewer overweight and obese Americans by then? Explain why you think so.

    • Essential for life

  • Main source of energy
    • 50-65% of calorie intake should be carbs;
    • 1 (g) of carbs = 4 Calories.
      • Sources: cereals, fruits, breads, pasta, rice
      • Fiber: indigestible carb., helps maintain healthy digestive system
      • Calories from fiber cannot be used for energy…indigestible!

Fat

  • Supplies and stores energy
  • Transports vitamins
  • Stored fat protects organs
  • Maintains body temp.
  • < 30% of calories should be from fat;
  • 1g. of fat = 9 Calories.
  • Sources: plant oils, meats, cheese.

Saturated fat (bad fat) solid at room temp.

Unsaturated fat (good fat) usually liquid at room temp.

Trans- Fat (process fat) -liquid vegetable oils to make them more solid.

Average American eats 3 times recommended amount of fat daily.

Trans-fats

  • Created in an industrial process that adds hydrogen to liquid vegetable oils to make them more solid.
  • Also called “partially hydrogenated oils”
    • Found in fried foods; French fries and doughnuts, and baked goods; pastries, pie crusts, pizza dough, cookies, crackers, and stick margarines

  • Builds and repairs cells and body tissue
  • Forms muscle, hair, skin, nails
  • Produce hormones
  • 1g. protein = 4 Calories
  • 10-15% of calorie intake should be protein.
  • Best Sources: meat, fish, beans, nuts

Complete Proteins” – from Animal sources

    • Such as meat, yogurt, eggs, cheese, milk

(also soybean products)

    • Foods from animals contain cholesterol

Incomplete Proteins” – Plant sources

    • Combinations of plants that contain different amino acids, such as grains with beans, can provide complete proteins for a vegetarian or vegan.

Found in the Earth’s crust; needed for proper body functioning, blood pressure, muscle movement, bones, healing injuries; do not provide any energy;

  • Ex: calcium, iron, phosphorus, zinc, copper…
  • Best Sources: vegetables/fruit (producers), seafood & meats/humans (Consumers)

  • Body is 60-70% water
  • Every cell must have water
  • Needed for chemical reactions, normal body temp, digestion
  • Recommended 64-80 ounces of water daily.

  • If a parent has a child who is obese, mainly due to poor eating habits and poor food choices, and the child is suffering health problems as a result, should there be any punishment for the parent? What should be done for or to parents, if anything? What if the parent starves the child? What if the child dies? At what age should the child become responsible for his or her eating habits? Explain.

  • Hunger & appetite are two very different things. Hunger is the physical need for food whereas appetite is the desire for food. Hunger occurs with low levels of glucose in your blood, several hours after eating – it is a protective mechanism that ensures your body is adequately fueled. Appetite is the conditioned response to food - it is a sensory reaction to the look or smell of food. It is appetite that can lead “your eyes to be bigger than your stomach.”
