When Mentos are added to a bottle of Coke, their surface (which looks smooth but is microscopically similar to the surface of the moon) acts as a nucleation site, allowing carbon dioxide bubbles to form rapidly and cause the fountain effect. A 2L bottle of Coke turns into 8L of CO2 gas. Certain sweeteners lower the surface tension of the Coke, making it easier for those bubbles to form, creating a larger fountain.
