Breakfast - Spinach Avocado Sprout Soup by Tom Lindsley (Page 288)

  • Ingredients:
    • 1 c water
    • 2 to 3 handfuls of baby spinach
    • ½ chopped cucumber
    • ½ or 1 avocado
    • ¼ red pepper (optional)
    • 1 T Miso Tamari (optional)
  • Directions:
    • Blend all ingredients.
    • Put a handful of mung, adzuki, lentil or other sprouts in a bowl.
    • Pour the above blended mixture over the sprouts.
    • Top with dehydrated sprouted dehydrated buckwheat, oats or other sprouts and and dulse and or other seaweed

Lunch - Veggie Mix by Jasmine Hsu (Page 296)

  • Ingredients:
    • 2 zucchini, sliced into strips with a vegetable peeler
    • 2 large handfuls of bean sprouts, approximately 2 cups
    • ¾ c chopped nuts (use almonds, walnuts, or cashews)
    • 1 red or yellow bell pepper, sliced into strips
    • 1/2 c fresh chopped cilantro
    • Juice from one lime
    • 1 T olive oil
    • ¼ t sea salt
  • Directions:
    • Toss all ingredients together in a bowl until well coated.
    • Add a dash of salt. Enjoy!

Supper Recipe by Mahika Gupta

Mahika Gupta, junior at Brandeis University studying biochemistry, was an intern for Eat to Thrive and Real Kids Real Food during Summer 2020. Growing up with parents who immigrated from north India she lived as a vegetarian with a focus on having a healthy lifestyle. Over the years she learned the importance of not only having a balanced diet and constant exercise in her life but also the importance of a healthy mindset.

Zucchini Linguini with Marinara Sauce

Ingredients for Noodles:

  • 6 zucchini, peeled
  • 3 tablespoons olive oil
  • 3 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1⁄2 teaspoon thyme

Ingredients for Sauce

  • 8 roma tomatoes, chopped
  • 1 cup sundried tomatoes, non-oil, soaked for 2 hours, save soaked water
  • 3 Medjool dates, pitted
  • 1 tablespoon lemon juice
  • Sea salt to taste
  • 3 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1⁄2 teaspoon thyme
  • 3 tablespoons olive oil

Zucchini Linguini with Marinara Sauce

Directions

  1. Peel zucchini, cut off ends, spiralize, and put in a bowl.
  2. Cut noodles into 2 - 3 inches in length.
  3. Stir in virgin olive oil, oregano, basil and thyme to marinate while preparing sauce.
  4. Put all of sauce ingredients in a blender and blend. If too thick, thin with soak water from sun dried tomatoes.
  5. Pour sauce over noodles and serve immediately.

Theresa Drum is a trauma specialist. She hosts a complimentary weekly class on the impact of meditation and creating a context. A context is a lens through which you look at your life in the moment, such as gratitude or joy or persistence. She has worked as an educator for 40 years in a variety of private and public settings. At Yale University, she worked in an adolescent trauma unit in the ’80s and worked in the Boston prison system with adolescents. She has also served on the Boston/Waltham in-home team for suicidal and traumatized children. She went into homes with clinicians to wrap support around children and that’s when she started meditation training.

Currently, she's working with Dr. Joe Dispenza in his intensive training in Italy and in the United States. Joe Dispenza created the movie, “What the Bleep?” He is a neuroscience specialist and one of the top trainers in the world.

Theresa is on the NamaStay Sober Board, a non-profit that gives support and complimentary memberships to people in early recovery from addictions including eating disorders and debt. Their mission is to aid those in recovery by reconnecting their bodies and minds through affordable yoga, fitness, meditation, and wellness-focused community events. NamaStay Sober was founded by her daughter, Nico Longo, who was an intern for Eat to Thrive and had a severe eating disorder.
