A public catering enterprise is an entrepreneur performing functions for the organization and provision of services for the preparation, sale and consumption of culinary and other food products in the field of public catering.

Design is the process of creating something purposefully, aesthetically beautiful, and functionally. The word itself comes from the English word "design," which means "to create a project," "to plan," "to shape based on an idea."

The basic meaning of design

Design is a combination of art and technology, which implies the harmonization of form, color, structure, material, and function, designed to satisfy human needs, create comfort, and provide aesthetic pleasure.

Depending on the price norms that must be added to the cost of the product (or service), food products are divided into five categories: luxury, premium, first, second, and third.

Restaurants - luxury, higher, first and second, bars - luxury, higher, first and second; canteens - second and third; general type canteens - second; specialized canteens - first and second; independently operating buffets - first, second and third categories.

The group of luxury catering establishments includes restaurants and bars with exquisitely decorated buildings and rooms, with maximum comfort and convenience for consumers and service personnel. In addition to the above, they must be equipped with engineering equipment, furniture, dishes, and lighting equipment, manufactured according to special orders that meet modern requirements.

The luxury category, according to the standard, is assigned to restaurants and bars. They must meet the following requirements:

High quality of the building's interior;

dazzling beauty;

breadth of types of services;

unique assortment;

availability of custom and signature dishes;

a wide range of ordered and branded beverages.

The highest category of catering facilities consists of restaurants, bars, and cafes, the activities of which are based on an assortment of dishes of complex preparation, distinguished by high-quality products, services, as well as high level of decoration and modern technical equipment of the building and premises of the enterprise.

The first group of catering facilities includes restaurants that are not included in the luxury and highest categories, including railway, bus stations, restaurants at airports, sea and river vessel restaurants, cafes, cupboards, hotel restaurants and cafes, shashlik houses, mantikhonas, chuberek houses, wine and beer bars, public entertainment establishments (theaters, cinemas, etc.) and buffets at sports facilities.

The second category of food products includes canteens and dietary kitchens, snack bars, dumpling stores, cafes producing and selling food products from dairy products, evening restaurants and cafes organized on the basis of daytime canteens, buffets at automobile and railway stations, platforms and airports, which do not belong to the previously indicated categories and can include all "strata" of the population.

Catering facilities of the third category consist of catering facilities (kitchens and buffets) located at canteens, production enterprises, educational institutions, not included in the first and second categories.

Another characteristic feature of restaurants is that the dishes, snacks, services provided, and alcoholic and non-alcoholic beverages recommended to consumers must be of high quality, and the tables must be beautifully decorated. Therefore, in restaurants, bars, and cafes, employees with extensive experience and highly qualified special knowledge (chefs, waiters, and bartenders) serve consumers. In addition, waiters and bartenders are specially selected according to psychological requirements and are selected from among qualified individuals who know and strictly follow the rules of professional etiquette.

In luxury restaurants, specially ordered furniture is installed in its interior. In dining halls serving food to consumers, tables with two, four, and ten seats are installed. They are equipped with semi-soft and soft chairs.

Orchestral-vocal instrumental ensembles can perform in first-class restaurants. In first and second-category restaurants, music service is provided using stereophonic equipment. In luxury and high-category restaurants, tables are set.

The display windows of luxury and high-category restaurants can be decorated with decorative materials, colored slides, and use light and optical effects. In addition, information about the restaurant, its dishes, and services should be displayed in the display case.

In second-category restaurants, the self-service method of customer service is used.

The design of a restaurant or cafe is chosen depending on the topic:

National style (for example, the Uzbek teahouse interior - national patterns, wooden furniture, carpets).

Modern - minimalism, transparent glass, metal and glass materials.

Classical style - heavy furniture, golden colors, decorative elements.

Loft style - open communications, concrete or brick walls, industrial environment.

This style is a design direction that reflects the culture, traditions, and national values of the people.�The Uzbek teahouse interior is the best example of this.�Features:

Decorations and patterns: Uzbek national patterns, tiles, and fabrics are used on walls and ceilings.

Materials: mainly natural wood, carpets, ceramics, silk fabrics are used.

Colors: warm, natural colors - brown, beige, reddish, golden or blue tones.

Environment: provides a sense of hospitality and tranquility, demonstrates national culture.�For example: the most suitable style for a national pilaf restaurant or teahouse.

2. Modern style

Modern or "contemporary" design is a trend based on simplicity, convenience, and technological solutions.�Features:

Minimalism: no excessive ornamentation, everything is practical and purposeful.

Materials: metal, glass, concrete, plastic, and lightweight structures.

Colors: white, gray, black, beige, and pastel predominate.

Lighting: large windows, natural lighting, and modern lamps are used.�For example: cafes in the city center, restaurants for business lunches.

3. Classical style

Classics is a design direction that reflects luxury and grandeur.�Features:

Furniture: heavy and durable furniture made of wood with carved patterns.

Colors: luxurious colors such as gold, white, brown, burgundy, dark green.

Decorations: wall panels, columns, chandeliers, paintings, curtains.

Structure: symmetrical shapes, balanced arrangement, and elegant details.�For example: used in high-class restaurants, banquet halls, or hotels.

4. Loft style

A loft is a form of modern and free design inspired by industrial buildings. In fact, it originated in the 20th century from the transformation of factories and warehouses into residential areas.�Features:

Materials: brick, concrete, metal, and wood are used in combination.

Walls: left unpainted or brick, communications are shown open (pipes, wires).

Colors: gray, brown, black, white, and metallic.

Atmosphere: creates a cozy, modern, creative atmosphere.� For example: a cafe for young people, a coffee shop, or ideal for creative restaurants.

5. Minimalist style (minimalism) is a philosophy of design and living based on simple, clean lines and natural colors, free from excessive decorations. It is applied from interior to clothing and is aimed at "maximum cleanliness" and a "simple" look. This style combines tranquility, functionality, and aesthetic pleasure.
