PURICA S MLINCIMA

(Turkey with Mlinci)

This festive Croatian dish consists of a whole roasted turkey, paired with an authentic Croatian side dish known as mlinci. The dish has its origins in the Zagorje region.

Mlinci are best described as a cross between pasta and crispy, unleavened flatbread.

The dough, made with flour, water, and eggs, is rolled into thin, wide sheets. Due to their dry texture and neutral taste, they are usually torn into smaller pieces and submerged in hot water to soften. Later on, they are mixed with meat drippings, which transforms this simple meal into a luscious side dish.

Borscht

Borscht is our traditional national dish. It’s a symbol of a strong family and one of the most famous dishes of Ukrainian cuisine, made with beetroots as one of the main ingredients, which give the dish its red color. It is often served with smetana (sour cream) and pampushky (a small savory or sweet yeast-raised bun or doughnut typical for Ukrainian cuisine). I like how my mum cooking borscht.

Varenyky

Varenyky are popular Ukrainian dumplings filled with a variety of ingredients such as vegetables, meat, cheese, eggs, mushrooms, and even fruit. These stuffed dumplings are usually shaped into half-moons, boiled or steamed, then drizzled with oil or melted butter and paired with sour cream.

The sweet, fruit-filled version is typically served with sugar and sour cream. These dumplings are so popular that there is even a monument celebrating varenyky in the city of Cherkasy.
