On the Chromebook students best rewind tool is Screencastify.
When Woolf Fisher mention rewindable learning, they are talking about students having access to sound and video.
You can easily use Online Voice Recorder and Quicktime to record your voice explaining an activity, or you could ask students to use Screencastify to record your voice on their device.

Quicktime
Quicktime is a fast processing video or sound recorder that records straight to your computer. You then need to upload the files into a drive folder so that you can share them on your site or slides.
It also has some editing functionality after the clip has been created.
Files save as M4a so need to be converted to mp3.
