FRANCIS OF ASSISI
Francis of Assisi, in italian San Francesco d’Assisi, born Giovanni di Pietro Bernardone (1181/1182, 3 October 1226) was an Italian Roman Catholic friar, deacon and preacher. He founded the men's Order of Friars Minor, the women’s Order of Saint Clare, the Third Order of Saint Francis and the Custody of the Holy Land. Francis is one of the most venerated religious figures in history.
He was designated Patron saint of Italy. He later became associated with patronage of animals and the natural environment, and it became customary for Catholic and Anglican churches to hold ceremonies blessing animals on his feast day of 4 October. He is often remembered as the patron saint of animals. It was also speculated that he was vegetarian, so he never ate meat nor fish. He ate the crops of the zone.

1- Tamiser la farine: on passe la farine à travers une passoire.�
2 - Mélanger les solides: farine, sucre et sel.
3 - Incorporer les oeufs: petit à petit. L’on met les quatre oeufs ensemble et l’on remue.�
4 - Incorporer le lait: Également petit à petit, d’abord avec la spatule, puis avec le fouet.
On obtient une pâte bien lisse, et il ne nous reste plus qu’à...
5- Incorporer le beurre fondu.
6- Aromatiser avec 3 cuillérées à soupe de rhum brun.
