Loaded Fries

Ingredients

Method

2 c Fries - curly, thin, chunky cut

½ red onion

3 rashers bacon/ vegan bacon

1 spring onion

1 T butter

1 T flour

½ c milk

¼ c cheese

Optional toppings:

Jalapenos, chillies, parsley, crispy onions, sriracha, mayonnaise, BBQ sauce

  1. Preheat oven to 200c.
  2. Place fries on lined baking tray, season and place in oven to cook for 20 minutes
  3. Slice spring onion, dice red onion and bacon.
  4. In a small pot, melt butter on a low heat and mix with flour to make a roux.
  5. Slowly add milk to roux, adding milk a little at a time and letting thicken.
  6. Add cheese and mix until smooth, you can add a little jalapeno juice or spices if you want a spicy sauce, remove from heat and set aside.
  7. Cook red onion and bacon until crispy.

Nandos Sunset Burger

¼ tsp each of salt, garlic, paprika, pepper

  • Measure all spices and seasonings in to a large bowl
  • Slightly flatten chicken thigh with a rolling pin, between parchment paper and place in the bowl and coat both sides.
  • Add nandos sauce and coat chicken and set aside.
  • Cook chicken both sides in a fry pan on medium heat for 6 minutes each side.
  • Place a slice of cheese on the chicken when it is almost cooked so it can melt.
  • Toast buns with a little butter.
  • Assemble buns with mayonnaise, the chicken, gem lettuce, capsicum, nandos sauce and serve.

  1. Ensure the blender is powered off at the wall.
  2. If you are putting _________________sauce around or inside your cup, do this now.
  3. Add _______________, ice cream, oreos and sugar to the blender and attach the blender lid securely.
  4. Turn the blender on at the wall. Blend ingredients on a low to medium speed until just combined.

1/2 Tbs Soy Sauce

1. Flatten chicken breast with rolling pin.

2. In a bowl make a paste with the chicken breast seasonings

3. Rub this red paste on chicken breast.

4. Mix all purpose flour and corn-starch together on a plate.

5. In a bowl, add milk and add egg into it. Blend it together.

6. Now coat chicken breast with flour mixture and then dip into egg solution. Repeat this step.

7. Fry the coated chicken breast in oil and prepare your burger bun with mayonnaise paste, fried chicken breast, lettuce, little tomato and ketchup

8. In a small measuring jug, take mayonnaise, sriracha, ketchup and mix them all together to form a pinkish sauce.

KFC Style Sweet Chilli Bites

1/2 chicken breast

1 eggs, beaten

1/2 cup breadcrumbs

  1. Pat dry chicken breasts completely with a paper towel and cut into _______ and place in a plastic bag or bowl.

Wagamama Banana Kastu

Ingredients

Method

Fried bananas:

  • 50g plain flour
  • 150ml vegetable oil (for frying)
  • 40g panko breadcrumbs
  • 2 bananas, sliced in half

For the toffee sauce:

  • 20g vegan butter
  • 1 heaped tablespoon sugar
  • 2 tablespoons coconut milk
  • A pinch of sea salt

For serving:

  • 2 scoops salted caramel ice cream
  1. Toffee Sauce: Melt 20g vegan butter and 1 heaped tablespoon sugar in a saucepan over medium heat, stirring until amber-colored.
  2. Whisk in 2 tablespoons coconut milk and cook until thickened. Add a pinch of sea salt and keep warm.
  3. Batter: Mix 50g plain flour with a splash of oil in a bowl until smooth. Gradually add water until the batter is the consistency of single to double cream.
  4. Coat Bananas: Put 40g panko breadcrumbs in a shallow bowl. Dip banana halves into the batter, then roll in breadcrumbs.
  5. Fry Bananas: Heat 150ml vegetable oil in a deep saucepan over medium heat. Fry banana halves until golden, then remove and drain excess oil.
  6. Serve: Place two fried banana halves in each bowl. Add a scoop of salted caramel ice cream, drizzle with toffee sauce, and enjoy!

Sweet and Sour Chicken/ Pork

Ingredients

Method

100g pork or chicken�¼ chopped onion�¼ green pepper�¼ red pepper

Batter

2 Tbsp flour�2 Tbsp corn flour�½ egg (beat one egg and use half)�1 Tbsp water�¼ tsp salt

Sauce

2 Tbsp pineapple pieces

1 Tbsp pineapple juice

1 Tbsp tomato ketchup

1 Tbsp rice wine vinegar

1 Tbsp white sugar

½ tsp corn flour dissolved in the rice wine vinegar

  1. Dice onion,peppers and pineapple into large pieces.
  2. Combine all batter ingredients in a small bowl.
  3. Dice pork/chicken into 1.5 cm cubes and coat in batter.
  4. When oil is hot enough (batter or wooden spoon check), put pork/chicken in to fry. When cooked, drain on wire rack or paper towels.
  5. Combine all sauce ingredients in a bowl (aside form the pineapple).
  6. Stir fry peppers and onions until a little soft, add meat and pineapple and cook for 2 minutes.
  7. Add sauce and cook for a further 2 minutes and serve.

Taco Bell Tacos

150g beef mince

½ teaspoon chili powder, cumin

1/4 teaspoon oregano, garlic powder, salt, black pepper

1 Tablespoon tomato paste

  2. Heat the olive oil in a frypan over medium-high heat.

  4. Add the chili powder, cumin, dried oregano, garlic powder, salt, pepper, tomato paste, and water.
  5. Stir to combine and continue cooking over medium-low heat until the sauce has thickened, about 3-5 minutes.
