The sum of the percentages in the component recipe must represent 100% of the intermediate recipe .

The stuffing (intermediate recipe) is composed of 75% ricotta, 10% smoked salmon and 15% spinach.

  • For the percentage in the finished product : indicate the percentage of the ingredient in the finished product

75% ricotta is present in the filling, which itself makes up 40% of the finished product = 30% ricotta in the finished product
