Can college students correctly identify which protein sources are ranked as low,

medium, or high based on greenhouse gas emissions per gram of protein?

The study assessed college students’ understanding of sustainable protein sources. “Farmhouse Fumes” booths took place in three UNT dining halls during lunch. At the booths, the

investigators asked students to volunteer to play a game in which they categorized six different protein

sources (beef, poultry, dairy, soy, fish, beans) as low, medium, or high based on their greenhouse gas

emissions per gram of protein. The participant then placed each card, depicting one of the six protein

sources, on a board in either the low, medium, or high greenhouse gas emission category. Result determined correct identification of protein sources according to the greenhouse gas emissions.
