Complex Carbohydrates

should be ½ of your calorie intake daily

The complex carbohydrates we eat can be divided into:

DIGESTIBLE

INDIGESTIBLE

Digestible: Starch Molecule

Starch is a POLYSACCHARIDE made up of hundreds or thousands of glucose molecules.

      • Glucose – a monosaccharide or simple sugar
      • Polysaccharide – a complex carbohydrate

7 of 27

Digestible Carbohydrates

DIGESTIBLE:

    • Intestinal enzymes can break down
    • Body efficiently changes starches to energy

INDIGESTIBLE: CELLULOSE

Cellulose:

  • Polysaccharide made from large amounts of glucose
  • Forms rigid structure of plants
    • Examples: Celery strings, corn kernel membranes

Humans lack the digestive enzymes needed to break the bonds in cellulose molecules

CELLULOSE IN OUR DIET=

FIBER

Note: Although plants contain cellulose, that doesn’t always mean the plant is high in fiber

Sources of Complex Carbohydrates

DIGESTIBLE:

    • bread, cereal, potatoes, pasta, rice, and some legumes (dried peas and beans)

INDIGESTIBLE:

    • bran, whole-grain foods, raw vegetables and fruit (especially the seeds and skins), some legumes, nuts, seeds and popcorn

What are some benefits of complex carbohydrates?

NUTRITIONAL FUNCTIONS OF

COMPLEX CARBOHYDRATES

  1. Body’s main source of energy
  2. Provide bulk for the digestive process
  3. Tie up bile acids, decreasing reabsorption
  4. Lower cholesterol
  5. Promote utilization of fat

NUTRITIONAL FUNCTIONS OF

COMPLEX CARBOHYDRATES

CC are the body’s MAIN ENERGY SOURCE, typically from glycogen

Provide fuel for both:

Central Nervous System

    • Part of the nervous system that consists of the brain and spinal cord.

Muscular System

    • The muscles use the glycogen present in the muscle cells and in the bloodstream

15 of 27

Glucose & Glycogen

Glucose provides immediate energy

Glycogen is stored glucose

    • Produced in the liver
    • Reserve energy
    • Excess turns to fat in the body

16 of 27

Glycogen & Relationship to Breakfast

Skip Breakfast?

    • Body will slow brain and organ functions to conserve glycogen
    • More difficulty concentrating
        • May remember only ½ of what you hear
    • Lowers metabolism rate

17 of 27

Glycogen Storage & Exercise

  • Excess carbs stored as glycogen in liver and muscles

  • Body usually uses up glycogen stores within less than 2 hours of vigorous exercise
    • Important to eat carbohydrates every 4-6 hours

NUTRITIONAL FUNCTIONS OF

COMPLEX CARBOHYDRATES

  • Body’s main source of energy
  • Provide bulk for the digestive process
  • Tie up bile acids, decreasing reabsorption
        • Can cause diarrhea, nausea, abdominal pain
  • Lower cholesterol
  • Promote utilization of fat (see next slide)

Keep in mind...

Body does not need fat to properly use starch

HOWEVER

carbohydrates must be present

to convert fat to energy

Another bonus: COMPLEX CARBS often

contain OTHER NUTRIENTS & FIBER

Potential Problems for Removing Carbohydrates from a Diet

KETOSIS:

    • Process of burning fat without carbs

KETONE BODIES: By-product of ketosis

      • Damage to kidneys
      • During pregnancy: brain damage & cognitive disabilities in babies
