Menu Plan

  • I chose this meal because we were learning about gravy’s and steak in class so this would be a good way to showcase both.
  • Furthermore the mashed potatoes are a simple to make side that accompanies the dish well.
  • I made Chicken Fried steak, Mashed Potatoes and Gravy. This dish is a known classic that is almost always pared. All dishes are served hot; the smooth gravy compliments the mashed potatoes, but the tender steak pulls the meal together.

Recipe: Mashes Potatoes

Ingredients

  • 4-5 potatoes
  • ½ cup butter
  • ½ cup milk
  • 1tbs salt
  • 1 tsp salt
  • 1tsp pepper
  • 1tsp garlic
  • Water
  • Fill large pot with water (1/2-3/4 full) and turn heat to high
  • Peel potatoes and wash
  • Cut potatoes into medium cubes
  • When water boils add 1tbs salt and potatoes
  • When done (cube slides off fork) drain and put in large bowl
  • Add in butter, milk, 1tsp salt, pepper, and garlic
  • Use beater to mix together and beat potatoes.

Recipe: Chicken Fried Steak

Ingredients

  • Cube steak (6)
  • 4 ggs
  • 3 cups flour
  • 2 cups milk
  • 1 tsp salt
  • 1 tbs pepper
  • ½ tbs garlic
  • Vegtable oil (as needed)

*note* SAVE GREASE IN PAN FOR GRAVY

  • Coat the pan with oil and turn heat to high
  • Mix together flour, pepper, salt, and garlic in a bowl
  • Mix together milk and eggs in a separate bowl
  • Soak cube steak in milk mixture
  • Then move to flour bowl and coat
  • Then place in oil
  • When bottom side is golden flip to other side
  • Repeat until all steaks cooked

Recipe: Gravy

Ingredients

  • 4 cups milk
  • 2 cups flour
  • 1tbs garlic
  • 2tbs pepper
  • 1 cup water
  • Salt to taste

  • Drain the oil from the pan trying to keep the pieces from the steak that fell off
  • Add milk, water, garlic, pepper, and salt
  • Slowly add flour and wisk in constantly
  • CONTINUOUSLY STIR until thickened

  • 5 cups flour
  • 6 ½ cups milk
  • 2tbs salt
  • 2tbs pepper
  • 1¾tbs garlic
  • water
  • Vegetable oil

  • Step 1: boil water
  • Step 2: peel potatoes
  • Step 3: cut potatoes
  • Step 4: add to water

  • Step 5: make flour and milk mix for steak
  • Step 6: begin to cook steak

Personal evaluation

  • I used one small counter to the left of my sink for the mise en place and I made sure I had all my ingredients laid out and separated into what dish it was being used in.
  • After finishing all of the dishes the time it took was about an hour and a half. I made sure I was always checking something and not just watching.
  • Whenever I was done with something I made sure to have it cleaned and taken care of before starting anything new.
  • I made sure to wash all of the counters before doing anything on them and washing my hands. I washed my hands after everything I did and especially after I opened the steak and eggs. I followed every procedure that we use in the classroom.
  • Cooking at home was a lot calmer than it is cooking at school. Even though my mom was hovering over my shoulder so see what I did differently it seemed like less of a time rush and need for precision. Also it is more likely that I would splurge with the amount of ingredients at home, an example would be when I need a little more water or milk, I would just add a little more not measuring it out.

Parent Evaluation

  • Cydnee was ready for this dinner, she all items she needed laid out and ready to go.
  • No improvements were needed, the more comfortable she is with the meal the more she can add a little of her own flare.
  • She was very good at her cleanliness, better then I am or ever was!
  • The meal was great, the best item was her gravy! That was the best gravy I have tasted in a long time. Cydnee has gotten a lot better with her cooking and awareness of the time and effort it takes to cook.
