Upon registering more details will follow.  All of the cheeses will require you to finish a component the next day at home.  We will do it  in class and you will have instructions but you must be prepared to do it the next day.  As well, some of the cheese will require you to do something for the week or 2 after.  So be prepared to work with your cheese.
There are different kinds of rennet - I work with the liquid rennet which I get from a cheese supply company in Ontario (you can buy it and other ingredients from this cheese company). And I have seen it on Amazon. Many Home cheesemakers  use rennet tablets that they can get locally.  What are you interested in working with?
