The team at Marbled is looking forward to providing the makings of a memorable spring feast for you and your family and friends. Please take the time to consider what type of roast you're looking to prepare and how many guests you will be serving. You can find roast descriptions and portion recommendations below.

This year we are also offering a few accompaniments to your roast or ham. Everything is house-made with local, seasonal and organic ingredients. All of our proteins are responsibly sourced from local farms and always raised without hormones or antibiotics.

NOTE: Because we are a whole animal butcher shop, we only have a limited amount of hams and lambs. We want to be sure we can source the best meats in the Hudson Valley for your holiday.

• Recommended portion is 3/4 to 1 lb per person. Choice of first cut (flat/lean), point (deckle/fatty) or whole packer. Trimmed to 1/4 inch of fat.

Rocky Mountains, USA. Pasture raised and finished with minimal grain supplemental feed (no animal by-products, hormones, growth stimulants, or antibiotics from birth).

Leg of Lamb - Bone-In $14/lb | Boneless $16/lb
• We will prepare bone-in or boneless, shank on or off. Recommended portion for bone-in is 3/4 lb per person, for boneless 1/2 lb per person. If selecting bone-in with the shank on, make sure your cooking vessel is large enough.

Crown Roast Lamb - $32/lb
• Recommended portion is two to three ribs per person. There are eight ribs per rack, crown roast is 2 rack minimum.

Rack of Lamb - $26/lb
• Recommended portion is two to three ribs per person. There are eight ribs per rack, sold as whole or half racks.

Loin Roast (boneless)Lamb - $32/lb
• Recommended portion is 1/2 lb per person.

Shoulder Roast - Bone-In $12/lb | Boneless $14/lb
• Recommended portion for bone-in is 1 lb per person, for boneless 3/4 lb per person.

Shanks - $11/lb

LARD BREAD - a special collaboration between our shop and Erin at Signal Fire Bread. With our inspiration to design a loaf reminincent of our love for Mazzola's and Caputo's in Carroll Gardens, Brooklyn, NY. Erin created what we want to consider the Hudson Valley Lard Bread.

• Recommended portion is two guests per rib. Upon request we will hinge and tie (separate the meat from the bone and tie it back together for best results in cooking and easy carving).

Whole Tenderloin/Filet - $38/lb

Duck (whole)
• Moulard - Fresh and never frozen. Larger than average birds with wonderful steak overtones and a deep red color. (Average 6-8 lbs) - Hudson Valley Duck Farm. Recommended 1 lb per person. $8/lb
