Open letter: Food and nutrition science should avoid using the term “ultraprocessed foods” and the "NOVA classification"
Science must be objective, neutral, and verifiable. As outlined in the "Open letter" (see below), the NOVA classification and the term "ultra-processed foods" do not meet these criteria. We therefore call on all scientists and all media addressing the public to refrain from using the term "ultra-processed foods" or "UPF" and the NOVA system in scientific discourse on food and nutrition or in the assessment of the influence of food processing on the quality and nutrient content of foods. Food and nutrition sciences must rely on evidence-based concepts and should not be guided by terms designed for public appeal.
