    About our pigs

    We raise a British heritage breed called Tamworth hogs. The Tamworth is on the Slow Food UK Ark of Taste and listed by the Livestock Conservancy as threatened. Unlike previous years, these hogs have not been fed Certified Organic feed, unfortunately. They have, however, enjoyed discarded Organic produce from our neighboring farms, and when possible, we have raised the pigs on our Certified Organic pastures rather than indoors. Even when not on the pasture, the pigs always have plenty of space to move around and decide for themselves whether to be under cover or out in the open. We have not used any antibiotics, hormones, or other medication on these pigs. We have used a herbal wormer that is certified Organic in the UK but has not gone through the process to be certified in the US.

    Buying pork by the half

    You’ll work with the butcher, Heritage Meats in Rochester, to determine how big you want your roasts, what flavor sausages, how many chops per pack, etc. You will also have the opportunity to keep the weird bits like jowls (or the whole head!), organs, and hocks. When it’s ready you’ll pick it all up at once at the butcher in Rochester. You will probably have 50-60 pounds of meat total per half. You will pay us $6/lb by hanging weight (before it is butchered); hanging weight is usually around 85-95 lbs per half. You will also pay the butcher separately for the processing costs (varies depending on your specifications, generally $50-75). We are still trying to figure out a few different pieces of the puzzle. We hope to have the meat to the butcher by mid-November. We will take orders through October and will update everyone as soon as we have more information.
