Temperature Control Records - Fridges and Freezers
All fridges and freezers must be checked daily in order to ensure all food is being stored safely and that they are not falling into the "Temperature Danger Zone".

Pathogenic bacteria thrive in warm conditions. This is referred to as "The Temperature Danger zone" and is between 5°C and 60°C. Below 5°C most food poisoning bacteria do not grow Above 60°C most food poisoning bacteria begin to die Spoilage bacteria will still grow in the refrigerator, so prepare food within the packet "Use By" dates. Listeria will grow at 1°C.

IMPORTANT: When recording temperatures, should any be in the "Temperature Danger Zone" you must notify your supervisor immediately.
