The carcass only yields a certain amount of cuts on each region, so we will have the butcher cut it so you receive your favorite cuts. For example, the rib primal can be cut into rib roasts, bone-in ribeyes, tomahawk ribeyes, or boneless ribeyes, but you will only get one.
