The Hatchery Chicago Private Kitchen Application
Dear Prospective Tenant,

Thank you for your interest in growing your business at The Hatchery Chicago! The Hatchery is a non-profit food and beverage business incubator focused on building a thriving entrepreneurial community. We will evaluate tenant applications for private kitchens on the following criteria:

- Job creation on site
- Potential for company growth
- Compatibility with current business community
- Participation in Hatchery programs, services, and events
- Involvement and contribution to the entrepreneurial community
- Creditworthiness
- Willingness to confidentially share business data (for aggregate and lessons learned use only)

You will also be required to provide the following:

- Last year's P&L report and P&L projections for the next three years (annual projections are acceptable; monthly projections are not required but will be accepted)
- List of your monthly debt obligations
- Business plan
- Last year's tax returns (IRS & IL)
- List of current and future accounts
- Up-to-date Food Safety/Protection Manager Certification
- Viable insurance
- Address of current production space
- Possible references

The Hatchery’s private food-grade production spaces are designed to be modular, meaning that as you grow, you can combine kitchen spaces if you so choose and if the neighboring space is available. Each kitchen will be “move in ready” with the following amenities included:

- Optional: stainless steel exhaust hood 66” deep x 120’’ wide
- Stainless steel 3 compartment sink and faucet
- Stainless steel work table w/ integral double basin sink
- Stainless steel hand sink and faucet
- Health department certified
- Access to dry and cold storage, co-working space, and conference rooms
- Loading/receiving docks
- HR/workforce development services
- Current Hatchery programming and consulting services
- A welcoming and innovative atmosphere for food industry entrepreneurs
