Ground Beef
There's always plenty of ground beef! Lots of good flavor with 20% fat.
Ground Chuck
Coming from the front shoulder, chuck is known for longer, tougher mussel structure, but still has a good amount of fat. It's flavorful and makes excellent burger patties.
Beef Kabob Meat
Small pieces of steak, great for skewering on the grill or using in stews!
Beef Patties
1/3 lb. each, 3 to a pack
Round Steak, ~ 1/2 - 3/4 lbs.
Tenderized by the butcher (meaning, the butcher gave it a few whacks with a tenderizing mallet). A steak for country fried steak or fajita night. This steak will take a marinade very well and is good for the grill or skillet. The "round" is the back leg of the animal, so this mussel group does a lot work moving the animal forward. It's going to be lean in fat, flavorful, and perhaps have a bit of a chew to it--slicing thin helps (and always cut against the grain).
Pork Breakfast Sausage Patties
4 to a pack. Whole hog grind for all the good flavor.
Pork Loin ~ 2-3 lbs.
Pork Bratwurst
4 to a pack. Whole hog grind for all the good flavor.
Pork Chops
Bone-in, 2 per pack with a beautiful fat cap.
Pastured Chicken
Chickens are on pasture and a receive a non-gmo grain. Raised by Andre Faul.
Pastured Cooking Fats
These power house fats remain stable for cooking at high temperatures, and great sources of vitamins A, D and K. Use as a nutritious base for any stove-top cooking or oven roasting. The lard has a very neutral taste, the tallow brings a slight beefy taste to the dish.

Beef Tallow, 1 pint
Pork Lard, 1 pint
Bone Broth
Bone broth is cooked for 24-48 hours. It's a combination of water & bones with no additions besides some apple cider vinegar, which helps pull out minerals from deep within the bones. Use it as a base for any soup or enjoy it plain as an accompaniment to any meal! Unsalted, comes frozen. The fat cap can be mixed in for extra nutrition or can be scraped off and used in the skillet.
