Collards: Past, Present and Future with Catherine Cross Tsintzos at the Duke Campus Farm

For three years, the Duke Campus Farm cultivated the Jernigan Yellow Cabbage Collard as part of the Heirloom Collards Project, a national seed saving initiative with the goal of cultivating and preserving a wide range of collard varieties. Each summer, we let the collards bolt, flower, and go to seed. The collards that we are working with today are the descendants of years of seed saving work, community, conversation, and care. They carry with them the memory of dozens of hands and hours. 

Seed saving is just one way we preserve the legacy of this crop, a Southern staple and a symbol of Black foodways and resilience. On June 25th, we'll tell the story of the Jernigan collards at various stages of its growth, from seed to leaf to flower to hulls, and cherish their abundance through acts of art and consumption- papermaking, recipe swaps, and conversation. We hope you will forge, deepen or rekindle your relationship with collard greens during this three hour workshop. 

We're eager to welcome local artist Catherine Cross Tsintzos to lead us in discussion and papermaking with collard chaffe and leaves, followed by dinner from Boricua Soul (with collards, of course) and a collard recipe swap. This event is free and open to all. We strongly encourage you to bring your own collard recipes and stories to share. 

About the artist: Catherine Cross Tsintzos is a multidisciplinary artist focusing on the intersection between art and agriculture. Based out of North Carolina, Catherine is deeply entwined with and influenced by Southern and Appalachian history. She spends her time creating ceramics, papermaking, and printmaking that are centered on environmental and social issues, working with students in all disciplines.
