Is a game like DOOM (2016) using more than a color buffer to store information?
No, Doom is an incredibly easy game to render, and minimal engineering effort or thought was required.
Yes, each frame often collects multiple pieces of data (Depth, Stencil, Velocity, Light, etc.) , stores that information in multiple buffers, and then aggregates the information into a buffer (or texture) which is then finally drawn to screen.
What is a framebuffer?
A buffer that you can draw a scene to, and store as a texture.
